Description

Small handmade tabletop white oak ageing barrel with a wooden stand. With this 1 litre barrel you can age spirits such as whisky to give it a characteristic new flavour. Each barrel has a medium char which allows the contents to interact with the oak, leaving it with a smoother finish and the burned wood releases delicate new additional smokey flavours along with caramel and vanilla.

The oak barrel is available in 1 litre or 3 litre sizes.

Millstone Heavy Peated New Make Whiskey Spirit

New Make Spirit from the new Forsyth vats of Zuidam, a distinguished distillers in The Netherlands. Millstone is handcrafted in the traditional distillery owned and operated by the Zuidam family. More than 50 years of experience in distilling exclusive spirits and a constant search for perfection has led to the birth of this beautiful whiskey.

Its name comes from the mill used to grind the malted barley. By using windmills for grinding their malted barley, the distillery helps preserve the important Dutch heritage of the world famous mills. More importantly, the traditional millstones of the mills slowly grind the malted barley into flour. This traditional milling method causes virtually no increase in the temperature of the grain and thus helps to preserve the delicious aromas.

DISTILLATION

Millstone Whiskey is double distilled in handcrafted copper pot stills. The small stills have an extraordinarily large copper surface when compared to the large photos used elsewhere. The extra contact between the alcohol vapours and the copper helps eliminate unwanted substances and also stimulates the formation of the complex and fruity esters, producing a very delicate and fruity new spirit.

AGING

After careful distillation the whiskey is matured in small barrels. New barrels of American white oak and barrels that have previously held Bourbon and Sherry Olorosso are used. Because the barrels are new or only used once, they are stored in a warm and dry warehouse and the whiskey ages quite quickly. The downside is that the evaporation losses are quite high. Typically the “Angels Share” is between 4% and 5% per year.
